115g butter (use butter!)
50g granulated sugar
75g soft dark brown sugar

1. Preheat the oven to 180degrees (If you're using fan, like I do, turn it down to 160degrees). Cream the butter and both sugars together.

1 egg
0.5 tsp vanilla essence

2. In a separate bowl, combine the egg and vanilla essence and beat into the butter-sugar mixture.

125g plain flour
0.5 tsp baking powder

3. Sift  the flour, baking powder and salt. Stir to blend.

200g chocolate chips

4. Add the chocolate chips to combine.
5. Bake for 10-15 minutes.
6. Cool on the wire rack and remove from the baking tray.

What you'd get is really thin and spread out cookies. Chewy-middle nonetheless but crispy hard edge. The Boy says its very buttery. ♥

#1: A Basic Recipe

This is my ULTIMATE favourite. Fairy cakes. You can't go wrong with fairy cakes. There're always yummy, full of goodness and love. Swirl of generous icing on top, a sprinkle of rainbow icing bits on it, chocolate bits - make delightfully sinful bakes and fruits - make yummy morning grab-and-go breakfast food - what's not to love?

Preheat the oven at 177 degrees (I round up to 180).

113g butter (unsalted)
130g sugar (granulated, white)

Cream the butter and sugar together until light and fluffy.

1 tsp vanilla essence
1 zest of lemon (but I cheat and use lemon juice)

Beat in vanilla essence and zest of lemon.

210g plain white flour
1/4 tsp salt
1.5 tsp baking powder

In a seperate bowl, mix together the flour, salt and baking powder.

60ml milk

Add the flour mixture and milk into the butter/sugar mixture in thirds, starting and ending with the flour. Bake for 18-20 minutes.

Makes about 12 cupcakes
